Ashamed of Chicken Fried Steak?

Heaven forfend. I eat that every chance I get. No, I have not learned to make it: that would just open an unfortunate cardiovascular door. (Or, rather, shut one.)

I’m a Jew originally from New York so this is culturally and regionally not a meal I grew up with. I was about 35 before I tried chicken fried steak. It was at a diner in New Hampshire and I loved it. When a cholesterol test came back at 175 I went back for it two nights in a row. Sadly I have not had it in a few years. I have gout and I eating red meat can be painful.

I like the way my mom made it when I was little…

have the butcher run a round steak through the tenderizer TWICE. At home dredge the steak in flour that has been seasoned with a generous amount of fresh ground black pepper and just enough salt. Fry in a big iron skillet to desired doneness. Cover and let the steaks set while turning remains in the pan into country gravy.

Serve with biscuits, green beans and side salad of a wedge of ice cold iceberg lettuce with homemade thousand island dressing (mayo, ketchup & sweet pickle relish).

Great filling budget meal for a family in the late 1950’s
